Will I hurt my digital SLR camera by powering off and then back on between shots.?
Will I hurt my digital SLR camera by powering off and on between shots, or should I [can I] leave it on for extended times. and If I should leave it on, how long is too long… lol.

It shouldn’t hurt it, no. However there is little if anything to gain either. DSLRs consume very little power while idle (provided that you don’t use Live View).
You don’t need to turn your camera off in between every shot, but you can turn the LCD display off instead, which will help conserve battery power.
Also, your camera will have an Auto Power-off function…where the camera turns off automatically after a set time of idle operation. You can set your preferred idle-off time. Check your manual.
The good thing about dSLRs, is that their batteries usually provide very long life, so the need to constantly power your camera on and off, shouldn’t be something you really need to wory about…that’s what the Auto-off power feature is for.
While turning the power on and off won’t hurt except wear on the switch, if you’re using a Nikon dSLR camera, you do not need to turn off the power. Power consumption while turned on and doing nothing is the same as power turned off. I have left my camera on for a week, gone out and shot 400 pictures (no flash), and still had lots of battery life left. The only reason I turn my camera off is so I don’t take pictures of the inside of my camera bag.
I would venture to guess that Canon cameras are pretty much the same.
